‘Fried Chikin’ made with Oyster Mushrooms
Wet Batter
 200 g Punnet Oyster Mushrooms
 1 Frying Oil
 0.50 cup Corn Flour
 0.50 cup Plain Flour
 2 tbsp Mixed Spice Blend (try Cajun for a bit of kick!)
 0.75 cup Milk or plant milk
Dry Batter
 0.50 cup Corn Flour
 0.50 cup Plain Flour
 2 tbsp Mixed Spice Blend

Start by mixing the wet ingredients and the dry ingredients in separate bowls.

Coat the oyster mushrooms in wet batter and then dry batter until fully coated.

Heat oil and fry carefully until golden and crispy.

Set aside on drying rack for two minutes, season to taste and serve.
