Blue Oyster
The surface of the mushroom’s cap is smooth, taut, and brittle, sometimes containing a slight depression in the center and displaying wavy edges. The caps also appear dark blue when young, lightening into a blue-grey shade with maturity.White Oyster
White Oyster mushrooms are delicious, fast growing and extremely pretty to look at. As one of our favourite fungi, we love our Whites in almost anything.Italian (Phoenix) Oyster
Phoenix oyster mushrooms are medium to large in size with caps averaging 5-20cm. The smooth, thick caps are fan-shaped and range in colour from white-beige to pale tan with lilac or grey tones.Pink Oysters
Pink Oyster mushroom has a short stem. The cap and stem grow in various attractive shades of pink. When cooked, their flavour and texture resembles much like that of ham and bacon, especially when sautéed on a pan with oil. If cooked to a crisp, the mushroom’s flavour enhances the taste to that of crispy bacon bits!Shiitake mushrooms have umbrella-shaped caps, wide open veils, tan gills and curved stems. Shiitake mushrooms are often described as having an earthy, smoky flavour and a rich meaty-yet-buttery texture when cooked.

Lion’s mane mushrooms are large, white, shaggy mushrooms that resemble a lion’s mane as they grow. They contain bioactive substances that have many beneficial effects on the body, especially the brain, heart, and gut.Golden Oyster
Golden Oysters are more exotic and harder to come by than their white and blue cousins. They have a crunchy texture and nutty flavour, but are great sauteed or dry fried.Chestnut
A cousin of the slimy Nameko this wonderful clustering, wood loving mushroom forms dense clusters of beautiful, dark orange gilled mushrooms with a slightly shaggy cap, without the slime layer Namekos have.Bring some sparkle to your kitchen!
